I think kangaroo is hard to beat. In my opinion you must be very careful when picking kangaroo leather for jesses. It is great for traditional but usually too thin for aylmeri anklets. Maybe I'm wrong because I saw only one piece of this leather, which was very strong but thin. And sorry for my English . I'm from Poland.

I know someone who has had 'roo leather, well greased/oiled, last many years on redtails and harris's. It's been "tried and true" around here for a very long time. Like any other leather, just make sure to cut with the grain. I've seen it in different thicknesses and qualities. Just remember, per gram, spider silk is stronger than steel. It may be thin, but it's tough stuff.
